The last we saw of him, he had begun working in his own restaurant in France called "La Ratatouille" alongside his two human best friends Linguini and Colette. Meanwhile, his rat friends move in to the restaurant's roof. Everything seems to be going quite well.
Have we figured out why the male human is named Pasta while the female human has a normal name 10 years later? Unfortunately, that question is something we will never understand.
But we can speculate. We can assume. We can basically know what has happened.

Ego, the critic, visits his restaurant frequently and has many more dish-induced memories from his childhood. That is, until one fateful evening when he tries another one of Remy's dishes, and is transported to the time that his parents told him they were getting a divorce over a plate of cassoulet, turning him into the harsh villain he is today. After that, Ego never returned.
After a few years at La Ratatouille, Remy is thriving, Linguini and Colette get married, and Remy's rat friends have multiplied by the thousands. Their happiness seems impenetrable, until a sudden health inspection immediately shuts down La Ratatouille due to the immense rat population and rampant threat of disease. Because in all actuality, a rat restaurant is gross and insane.
The restaurant closing does not deter Remy from continuing to pursue his dream, and he decides to start an independent business inside Linguini and Colette's house with under the table deals to avoid being shut down for a third time. Meanwhile, his rat friends don't know that La Ratatouille got shut down, and continue living in its roof, wondering where all the good food went.
Remy's latest job prospect works for a while, and since rats don't need money it provides Linguini and Colette with enough funds to have a child. But once again, their success is short-lived, when Remy is caught and thrown in jail after two years for not getting proper licenses for his business. He spends the rest of his days in jail.
That's why you never saw a sequel!
While all of this seems possible, in all likelihood, Remy is dead.
